Why make beer ice lollies?

During a hot summer day, have you ever wanted a refreshing ice cream but at the same time something with a little more kick? Well, we have the solution: beer ice lollies (or beersicles)! We have tested two different recipes, but there is no limit to your imagination, you can try out any combination you wish! From stouts to lagers, there is a world of beer waiting for you to enjoy in this new form.

Obviously this recipe contains alcohol so popsicles are not to be consumed by anyone under 18 years old! If you are looking for a non-alcoholic version, you can use 0.0% beer instead. They will be just as tasty.

Citrus Desperados Ice Lollies

Ingredients

  • 1 lemon 
  • 1 grapefruit
  • 4 teaspoons of sugar
  • Some desperados beer, either directly from the tap or from a bottle

 

Method

Step 1. 

Grate the zest of both the lemon and grapefruit into a small bowl.

Step 2.

Add 4 teaspoons of sugar to the mixture.

Step 3. 

Mix the mixture well by rubbing it together with your fingers until it becomes slightly sticky to the touch.

Step 4.

Squeeze the lemon and grapefruit juice into the mixture and discard the rind.

Step 5.

Add this mixture to the bottom of each mold. filling each evenly until the mixture has been completely used.

Step 6.

Pour the Desperados into the remaining half of the popsicle mold, and if you are using a home draught machine, you'll look super cool doing it!

Step 7.

Put the molds in the freezer for at least 5 hours (preferably overnight as we did).

Step 8.

Give them a try! To minimise the mess, we recommend you eat them straight out of the freezer because the alcohol present in the ice lollies will cause them to melt quickly!

Lagunitas Orange Ice Lollies

Ingredients

  • 1 orange 
  • 250ml of orange squash
  • Some IPA, either directly from the tap or from a bottle

 

Method

Step 1. 

Pour the orange squash into a bowl.

Step 2. 

Squeeze the juice of the orange into the bowl. 

Step 3. 

Divide the mixture evenly between the ice lolly moulds, until they are half full.

Step 4. 

Pour the Lagunitas IPA in the remaining half of the ice lolly moulds. We chose Lagunitas because it is available on the BLADE (and it is an office favourite) but you can use any IPA you like. Give it a final mix before adding the lids.

Step 5.

Put the ice lolly moulds in the freezer for at least 5 hours (preferably overnight).

Step 6.

Give them a try! To minimise the mess, we recommend you eat them straight out of the freezer because the alcohol present in the ice lollies will cause them to melt quickly!
