Below you will find all the ingredients and preparation steps for the biramisù recipe. It’s super easy and incredibly rewarding. With a little bit of patience and a few simple steps you’ll be whipping up this delicious pudding in no time!

Ingredients

  • 250g ladyfingers/ British sponge fingers
  • A light beer, e.g. lager 
  • Bitter cocoa: to sprinkle

For the cream

  • 3 eggs
  • 60g sugar
  • 30ml beer
  • 150ml mascarpone
  • 150ml fresh cream

For the ladyfinger soak

  • 150ml coffee
  • 150ml beer
  • 20g sugar

As simple as 1, 2, 3

1- Preparing the soak for ladyfingers:

This is what you will soak the ladyfinger sponges in, that will eventually be used for the bottom layer of your biramisù. Heat the beer and sugar in a saucepan. When the sugar has melted, add the ready-made coffee and let the mixture simmer a little until the alcohol has evaporated. Once ready, let the syrup cool in a container or bowl. We will need it later.

2- Prepare the cream:

Next, in a separate bowl you need to whip the cream, then carefully stir in the mascarpone. Once the two are perfectly combined, pop the mixture in the fridge until you have prepared everything else.

Whilst your cream is chilling you can get on with the next step. Beat the sugar and egg yolks in a glass bowl until the mixture is light and fluffy. When they are well mixed, slowly add the beer bit by bit and continue stirring until a creamy mixture is formed.

Now you want to suspend the bowl with the egg/sugar/beer mix into a pan of water, so that the bowl isn’t touching the bottom of the pan. You may have used this technique before when melting chocolate. This “bainmarie” technique acts a bit like a water bath, you don’t want it to come in direct contact with the fire from the hob, but it will warm through water in the other pan. Continue to stir (maybe better with an electric mixer) for 15 minutes. 

When the end result is thick and creamy, you can combine it with the mascarpone cream you prepared earlier. Do this gently, adding little by little so as not to alter the density of the cream.

3- Layer the tiramisù

Now that the cream is ready, you can start dipping the ladyfingers into the coffee soak you prepared first. Make sure that you only dip one at a time. Also do not leave them for too long because they will become soggy and too soft to use. Then place the ladyfingers side by side into the bottom of baking dish until they form a layer. Spread the cream evenly over this layer until it is covered, then sprinkle a little cocoa all over the surface. Then you can arrange the second layer of ladyfingers and cover with the cream again. You can add as many layers as you want. Then sprinkle a generous amount of cocoa on the last layer and your beer tiramisu is ready.
